A saltwater fish that lives in schools near the sea surface along the coasts from Hokkaido to Kyushu. It is a slender fish with a blue-green back, a silver belly, and semi-transparent flesh. Adults grow to around 40 centimeters, and the tip of the slender, protruding lower jaw is red when the fish is alive.

The sayori lives in inner bays and along the coast from Hokkaido to Kyushu, swimming in schools chasing food at the sea surface, and when danger approaches it escapes by leaping over the surface like a flying fish. It is a slender fish that looks like an even slimmer version of the saury, which belongs to the same order Beloniformes. Its lower jaw protrudes, making the tip of its mouth appear pointed. Its body is thought to be transparent so that it is hard for predators to see. Small sayori are called "enpitsu" (pencil) and large ones are called "kannuki" (bolt), and the kannuki is known as a super high-grade fish. The season is autumn and from winter to spring, but the further north you go, the more the season shifts, and in cold regions the sayori season lasts until early summer. From early summer to summer, after spawning, the fat content drops and bitterness increases, but some sushi connoisseurs prefer this spring-like bitterness. The sayori is a fish with an elegant flavor, but because it is low in fat, the taste is relatively delicate. At first glance the flesh looks like white fish, but it has the umami characteristic of blue-backed fish along with a moderate bitterness, and because the skin side has a distinctive flavor, it is a sushi topping favored by connoisseurs. With its refreshing flavor, ginger suits it better than wasabi, and oboro (sweetened fish flakes) is sometimes placed on top.
