Sushi Mitsukawa Kanazawa Main

A renowned, Michelin one-star sushi restaurant located in the atmospheric "Higashi Chaya District" of Higashiyama, Kanazawa.
It is acclaimed for Edomae sushi that makes the most of ingredients delivered directly from Omicho Market and Nanao Port in Ishikawa, as well as toppings sourced via Tsukiji.
Its three signature dishes are the "nodoguro hand roll (year-round)," the "Kano crab hand roll (Dec 8–Mar 20)," and the "kobako crab chirashi (Nov 7–Dec 31)."

Sushi Ikuta

A hideaway-style sushi restaurant located in Katamachi, Kanazawa.
Though relatively new, having opened in 2020, the chef is a skilled craftsman who trained at the Michelin one-star restaurant "Mitsukawa."
At "Rekireki," Mitsukawa's second line, he served as head chef and gained experience creating inventive dishes unbound by tradition.
Its appeal lies in Edomae sushi made with a thorough commitment to local ingredients, centered on the seafood of Kanazawa, Noto, and Himi.

Honten Kaga Yasuke

A long-established sushi restaurant founded in 1955, set in a prime location about a 5-minute walk from Kanazawa Station (East Exit).
Its pride is sushi made with fresh seafood sourced from the three Hokuriku prefectures, including Noto and Himi.
Particularly popular are signature creations such as the "Tama," made by grinding sweet shrimp into a paste and grilling it, and the "dashi-marinated salmon roe" using locally caught salmon eggs.

Sushidokoro Asanogawa

A restaurant standing along the picturesque Asano River in Kazuemachi, Kanazawa.

Sushi Shinosuke

A famous sushi restaurant with a history of more than 20 years.
Founded in 1999 in Sakaemachi, Komatsu, it relocated to its current location in Irie, Kanazawa in 2007.
Its pride is nigiri sushi that fully makes the most of the seafood of Hokuriku.
In spring there are halfbeak and cockle, in summer abalone, local grouper, and mantis shrimp, in autumn mackerel, and in winter yellowtail, crab, and cod milt—seasonal ingredients are offered throughout the year.

Sushi Kibatani

A popular sushi restaurant near the chaya district in Hikoso-machi, Kanazawa, renovated from a traditional house more than 100 years old.
Its skill is such that it won the "The Tabelog Award 2025 Bronze" and was selected for the "Tabelog Top 100 Sushi WEST 2025."
The chef grew up at a fresh-fish shop in Toyama and applies the Edomae techniques he cultivated at "Yoshiura" in Funabashi and "Sushi Aoki" in Ginza to Hokuriku ingredients.
Centering on fresh local fish delivered from Himi in Toyama and from Shinminato, he applies the optimal preparation to each type of fish.
