Nori, avocado, tobiko (flying fish roe), etc.

Because the California roll, which can be called the origin of the sushi roll, was born in America where people dislike raw seafood and nori, ingredients such as avocado, imitation crab, and cucumber are often used. Also, the nori is basically rolled on the inside rather than the outside.

Among rolled sushi, those that are thicker than thin rolls and use many ingredients are called thick rolls (futomaki), and among these, those rolled with the nori on the inside and the vinegared rice on the outside are called inside-out rolls (uramaki). It is generally made by placing vinegared rice and fillings on top of the nori and rolling it using plastic wrap or the like, and the outside is often decorated with tobiko, sesame seeds, or sushi toppings. Overseas, inside-out rolls are also called sushi rolls. Originally they were sushi created for foreigners who were reluctant about the black appearance of nori rolls or about eating seafood raw, and they are mainly served at sushi restaurants abroad. In recent years, sparked by the reverse import of the California roll, the popularity of sushi rolls has been spreading in Japan as well, but overseas, countless sushi rolls other than the California roll are served.

Various colorful sushi rolls

One of the representative sushi rolls is the rainbow roll. It is made by wrapping tuna, salmon, white fish, shrimp, avocado, eel, and so on over a California roll, and is characterized by its vivid coloring made to resemble a rainbow. In addition, there are various sushi rolls in the world made with creative ingenuity, such as the tempura roll made by rolling grouper or shrimp tempura, the dragon roll made by placing eel or avocado on top of a tempura roll or California roll, and the salmon skin roll made by rolling grilled salmon skin.

California roll

The California roll is a rolled sushi born in Southern California in the 1960s that is popular in America and Canada. It is often made by rolling avocado, imitation crab, and cucumber and coating the outside with tobiko or sesame seeds, and sometimes no nori is used.
It was developed for Americans who dislike raw seafood and nori. Through the California roll, many people gradually got used to vinegared rice, seafood, and nori, and came to love Japanese sushi toppings, which had a major influence on the worldwide sushi boom and the development of fusion sushi.
