Tsubugai (whelk) does not refer to a specific species, but is a common name for certain edible sea snails. Most whelk on the market belongs to the Buccinidae family. The meat is soft yet slightly chewy, with a mild umami and sweetness, though the overall flavor tends to be rather delicate.

Tsubugai (whelk) is a general term for edible sea snails found in the Sea of Japan, the Pacific coast north of the Tohoku region, and other areas. The word "tsubu" means "round" or "slightly elongated." Most whelk in circulation belongs to the Ezoboridae genera Ezobora and Ezobai of the Buccinidae family. The "bora" in Ezobora comes from the hollow interior of spiral shells (hora).

Well-known varieties include Matsubu (Ezobora), a high-end sushi topping; Todai-tsubu (Lighthouse Whelk), which has a distinctive elongated shape with clear spiral ridges (including Shiraitomakibai, Ookarafutobai, Himomakibai, and Kubirebai); and Iso-tsubu (Shore Whelk), found in shallow coastal waters (including Hime-Ezobora, Ezobai, and Ko-Ezobai). At conveyor belt sushi restaurants, frozen imported European whelk (Buccinum undatum) is commonly used.

Matsubu is the most representative of all whelk varieties, reaching about 20 cm in size and weighing around 1 kg. Although expensive, it is harvested in relatively stable quantities for a sea snail, making it a standard topping for sushi and sashimi. Its rich shellfish flavor and firm texture make it a highly popular sushi topping.

Flavor and Precautions for Whelk

Whelk is characterized by its subtly rich umami and sweetness with a relatively mild flavor. Compared to other shellfish like abalone and turban shells, it is softer but still has a satisfying chewiness.
Buccinidae family whelk contains a toxin called tetramine in its salivary glands that can paralyze human nerves. Consuming large amounts without removing the salivary glands can cause poisoning symptoms, so it is essential to remove them during preparation.
