【English Name】Neta (Sushi Topping)

"Neta" is a trade term referring to the seafood, egg, and other ingredients placed atop the vinegared rice (shari) in sushi.

Originally the word was "tane" (種), and the reading "neta" is said to have arisen from the culture of reversed words (togo) that was popular in the Edo period. Edo's craftsmen and merchants loved wordplay and routinely used expressions with their syllable order swapped. One theory holds that the origin lies in tekiya (street vendors) calling their own wares "neta."

Today "neta" is the more widely established term, but "tane" is used just as well, and both pass as correct expressions. In part of the sushi industry, processed ingredients are sometimes called "neta" and raw materials at the procurement stage "tane," but there is no clearly unified standard.

Sushi restaurants have many trade terms besides "neta," such as "shari," "murasaki," and "namida." These developed in part as jargon allowing chefs to communicate with one another without the customer understanding the content.
