Vegan roll is a general term for rolled sushi (maki-zushi) made without using any animal-derived ingredients. It contains no seafood, eggs, or dairy products, and is composed solely of plant-based ingredients such as vegetables, fruits, tofu, and pickles.

Representative fillings include avocado, cucumber, kanpyo (dried gourd strips), takuan (pickled daikon), shiso, asparagus, paprika, carrot, and kaiware daikon (radish sprouts). In recent years, creative vegan rolls using plant-based mayonnaise and cream-cheese substitutes have also increased.

At sushi restaurants in Europe and America, it has become established as a menu option for vegetarian and vegan customers, and many varieties exist, such as vegetable tempura rolls and sweet potato rolls. In Japan as well, the number of shops offering it is on the rise against the backdrop of health-consciousness and inbound demand.

Traditional rolled sushi such as kappa-maki, shinko-maki, and kanpyo-maki can also be classified as vegan rolls in the broad sense, but a distinctive point is that attention is required to whether the sugar and vinegar used in the vinegared rice involve animal-derived components in their manufacturing process.
