Soft-shell crab refers to crab in the state immediately after molting during its growth process, when its shell is still soft. In this state, the crab can be cooked and eaten shell and all, which is its distinguishing feature, and in the United States it is widely known as a standard seafood ingredient.

As a sushi topping, the common style is to coat the soft-shell crab in batter, deep-fry it, and roll it together with vinegared rice and nori.
