The Mexican roll belongs to the category of creative rolled sushi that fuses the essence of Mexican cuisine. With North America as its main place of origin, its adoption onto menus has spread mainly at fusion-style sushi restaurants.

The combinations of fillings have their own originality at each shop, with a tendency to choose ingredients reminiscent of Mexican cuisine such as avocado, jalapeno, and spicy sauces. There are also cases of adopting shrimp or spicy tuna (spicy-dressed tuna) as the base ingredient, and not a few shops combine cream cheese.

Each shop applies its own arrangements, such as coating the outside with tenkasu (tempura crumbs) or tobiko, or accompanying it with chili sauce or lime. Although handling at traditional sushi restaurants within Japan is rare, it is sometimes added to menus at overseas sushi bars and conveyor-belt sushi chains.

There is no unified, clear recipe for roll sushi bearing the name "Mexican," and the fact that diverse variations are born by region and shop is the great appeal of this roll.
