Temaki Sushi — Hand Roll

【English Name】Temaki (Hand Roll)

Temaki-zushi (hand-rolled sushi) is a form of sushi in which vinegared rice and ingredients are placed directly by hand onto nori (seaweed) and wrapped, without using a rolling mat. It is generally finished in a cone shape, and its great appeal is that eating it freshly made lets you fully enjoy the crisp texture of the nori.

The sushi shop "Tsukiji Tamazushi" is said to have begun offering it in 1971 (Showa 46), and the shop bills its version under the name "Ganso Suehiro Temaki."

It is also widely rooted as home cooking, with a familiar style in which vinegared rice, nori, and various ingredients are laid out on the table and each person chooses their preferred ingredients and rolls freely as they eat. The ingredients are remarkably varied; an appeal is being able to combine ingredients to one's liking, such as sashimi like tuna and salmon, as well as cucumber, tamagoyaki, natto, tuna-mayonnaise, salmon roe (ikura), and shrimp.

Distinct from the style of sushi shops where artisans wield their skills to form nigiri, it requires no special mastery and can be enjoyed casually by anyone, making it useful at parties and events where family and friends gather. Among rolled sushi, it can be called the most casual form.
