【English Name】Tokushima

Tokushima Prefecture, located at the eastern end of Shikoku, has its prefectural capital at Tokushima City and is distinctive for its terrain facing two sea areas, the Kii Channel and the Naruto Strait. In the Edo period the Tokushima Domain established its seat of governance here, and this land has developed since ancient times as a strategic point in Shikoku.

Owing to its location blessed by the sea, fishing is a pillar supporting the regional economy, and its connection to sushi cannot be overlooked. In particular, the wild sea bream tempered by the swift currents of the Naruto Strait is highly valued for its firm flesh and projects an exceptional presence as a sushi topping. Furthermore, Tokushima's proud citrus, the "sudachi," has become an indispensable presence in the world of sushi as a condiment adding a refreshing aroma and acidity to nigiri and sashimi.
