Ine-buri is a brand name for yellowtail (buri) landed in Ine-cho, Yosa District, Kyoto Prefecture. Ine Bay, surrounded by mountains on three sides with Aoshima Island serving as a natural breakwater, has long been a thriving fishing area; buri gill-net fishing began in the Muromachi period, and in the Edo period it was prized as a fish offered in tribute to the domain. Today both wild fish caught with large set nets and farmed fish are produced. As a sushi topping, the winter kan-buri (cold yellowtail) is most prized, with flesh of a pale cherry-pink color carrying a rich sweetness of fat and a fine-grained, sticky texture. It is enjoyed as nigiri and seared (aburi), and pairs well with wasabi soy sauce, yuzu, and ponzu.
