Makizushi — Sushi Roll

【English Name】Maki (Sushi Roll)

Makizushi (rolled sushi) is sushi in which vinegared rice and fillings are rolled in nori (laver) or kelp. In Edomae sushi it is also called makimono, and it is widely enjoyed both in restaurants and at home. It is classified as hosomaki (thin roll, about 3 cm in diameter), chumaki (medium roll), and futomaki (thick roll). Hosomaki includes kanpyo-maki (dried gourd roll), kappa-maki (cucumber roll), tekka-maki (tuna roll), and natto-maki, while futomaki (5 cm or more) uses a variety of fillings such as tamagoyaki (sweet rolled omelet), anago (conger eel), and shiitake mushrooms. The ehomaki of Setsubun and temaki (hand rolls) are also well established. Uramaki, in which the nori is on the inside and the vinegared rice on the outside, became popular in the United States and gave rise to many creative rolls such as the California roll.
