Teori-zushi (woven sushi) is a style of sushi in which various sushi toppings and small-shaped portions of vinegared rice are beautifully arranged in a grid on a board or plate, and the eater freely decides and enjoys their own preferred combinations. It is said to have been given this name because its appearance evokes hand-woven cloth.The common way to enjoy it is to arrange colorful ingredients such as sashimi, tamagoyaki, cucumber, shiso, and ikura in a checkerboard pattern, accompany them with nori, and eat them temaki-style (hand-rolled). It is often adopted at home for entertaining guests or at home parties, and its great characteristics are the gorgeousness of its appearance and the freedom for each person to choose their favorite toppings.
Unlike nigiri sushi or chirashizushi, the standout appeal is that it is a participatory way of eating in which the people around the table assemble the sushi according to their own preferences, rather than the maker deciding the finished form in advance.
