The Boston roll is a type of rolled sushi originating in the United States, an uramaki (inside-out roll) style roll sushi whose ingredients are mainly boiled shrimp (or lobster), avocado, and cucumber. It is characterized by a structure with vinegared rice on the outside and nori rolled on the inside, and it is often finished by coating it with tobiko or white sesame.
The name is said to derive from Boston, Massachusetts, related to that region being a famous producing area of lobster. Alongside the California roll, it is widely offered as a standard menu item at North American sushi restaurants.
In flavor, the sweetness of the shrimp and the creaminess of the avocado harmonize, with the cucumber adding a refreshing texture. It is sometimes served with a mayonnaise-based sauce or a spicy sauce. Although it is also handled at conveyor-belt sushi chains within Japan, it is originally classified as creative sushi born from American sushi culture. It is a representative of roll sushi belonging to a lineage different from traditional Edomae sushi.
