The tiger roll is a type of roll sushi widely enjoyed at sushi restaurants in North America. The name derives from its main ingredient, the tiger shrimp (a large shrimp that is a relative of the kuruma-ebi).
The basic composition is an uramaki (inside-out roll) style in which tempura-fried shrimp at the core is rolled with cucumber and avocado together with vinegared rice and nori. Because it is a "cooked-topping" roll using no raw fish, it is highly popular as a dish easy to eat even for those who dislike sashimi.
For finishing, spicy mayonnaise or eel sauce (a sweet-savory soy-based sauce) is often drizzled on, with tobiko or masago scattered over. It is characterized by the contrast between the crisp tempura texture and the creaminess of the avocado.
There are many derivative menu items, such as the "crunchy tiger roll" emphasizing texture with panko or tempura crumbs, and the "spicy tiger roll" with sriracha sauce added. Alongside the California roll and dragon roll, it is counted among the representative menu items of American sushi culture.
