Kikuzushi — Chrysanthemum Sushi

【English Name】Chrysanthemum sushi
A station boxed-lunch sushi (ekiben-zushi) that was sold in Hachinohe, Aomori Prefecture. It contains about five kinds of sushi—such as sea urchin (uni), salmon, scallop, squid, and mackerel—each wrapped in a bamboo leaf (sasa). A distinctive feature is that petals of edible chrysanthemum are arranged on top of the toppings and are also mixed into the vinegared rice.
