Nasu no Hanazushi — Eggplant Flower Sushi

【English Name】Nasunohana Sushi
A regional sushi of southern Akita Prefecture made using pickled eggplant. It is a home-style dish eaten at Obon, New Year, and celebrations, and is also enjoyed as an accompaniment to tea. Round slices of eggplant are pickled with sugar, salt, and shochu, and once the eggplant has softened, slits are cut into it, steamed glutinous rice (mochi rice) is spread on top of the eggplant, and chrysanthemum flowers and round slices of chili pepper are placed on top. The yellow of the chrysanthemum and the red of the chili pepper stand out against the purplish rice, making it a vividly colorful sushi.
