【English Name】Daito Sushi is a local sushi of Okinawa, Japan.
A regional sushi of Okinawa Prefecture. It is nigiri-zushi made by marinating Spanish mackerel or tuna in a special mirin-soy sauce and forming it over vinegared rice flavored with sweet vinegar. It is said to derive from the 'shima-zushi' of Hachijojima, the homeland of the pioneer settlers. The two are similar in features such as the use of strongly sweetened vinegared rice.
