Katei Sushi — Home-Made Sushi

Katei-zushi (home sushi) is a general term for sushi prepared at home, with representative types including chirashi-zushi (gomoku-zushi), inari-zushi, maki-zushi, and temaki-zushi. Gomoku-chirashi mixes shiitake, kanpyo (dried gourd strips), carrot, lotus root, and aburaage (fried tofu) into vinegared rice, decorated with shredded egg crepe (kinshi-tamago) and chopped nori, and is served at celebratory occasions such as Hinamatsuri (Doll Festival). In the late 1970s, "chirashi-zushi no moto" (chirashi-zushi mix) from Momoya, Mizkan, and Nagatanien spread. Inari-zushi is aburaage simmered in a sweet-savory sauce and filled with vinegared rice; the Kanto style is generally bale-shaped (tawara), while the Kansai style is triangular. Temaki-zushi requires no rolling mat (makisu); each person places their preferred fillings on top and rolls it, and it is enjoyed in family gatherings. Today, with dining out becoming the norm, opportunities to make it at home are gradually declining.
