A sushi donut is a type of creative sushi made by shaping vinegared rice into a donut form and colorfully arranging ingredients such as salmon, tuna, and avocado on the top surface.It is said to have drawn attention around 2016 when a vegan influencer posted a photo of vinegared rice shaped into a ring on social media. After that, restaurants across the United States, beginning with "POKEE" in New York and including Los Angeles and Houston, adopted it onto their menus, and it spread mainly via Instagram.
The making method is simple: vinegared rice is packed into a donut-shaped silicone mold or baking mold, flipped over and shaped, and then topped with sashimi or vegetables. There is also the device of laying nori on the bottom surface to make it less likely to stick to the hands. Characterized by a palm-sized scale and a gorgeous appearance, it is also popular as event food for parties and Hinamatsuri.
Unlike traditional nigiri sushi, the freedom of ingredients is high, and diverse variations are developed, such as vegetarian-oriented versions and arrangements using brown rice or black rice. It can be called an example of "reverse-imported" fusion cuisine in which Japanese sushi culture has been reinterpreted overseas.
