【English Name】Rainbow Trout (Trout Salmon)

Nijimasu (rainbow trout) is a freshwater fish of the genus Oncorhynchus in the salmon family, native to the Pacific coast of North America. It was introduced to Japan from California, USA, in 1877, and aquaculture became established. The usual body length is about 40 cm, but sea-run individuals called "steelhead" exceed 1 m. Characterized by black spots and a reddish-purple longitudinal band on the body surface, the rainbow-colored breeding coloration of males during the breeding season is the origin of both its Japanese and English names. In sushi restaurants it circulates as "trout salmon," mainly from sea-pen aquaculture of the large variety Donaldson in Chile and Norway. Its orange flesh boasts fat richness and a soft mouthfeel, and is enjoyed as a topping for nigiri and hand rolls. Aquaculture allows year-round supply.
