【English Name】Leaf-Wrapped Sushi

Happa-zushi (leaf sushi) is a general term for regional sushi in which vinegared rice and ingredients are wrapped in tree leaves. It developed as a preserved food in various places, mainly in mountainous areas far from the sea.

Representative examples include kakinoha-zushi (persimmon-leaf sushi) of Nara and Wakayama Prefectures, hoba-zushi (using magnolia leaves) of Gifu and Nagano Prefectures, and sasa-zushi (bamboo-leaf sushi) of various regions. Mackerel or salmon fillets are often used as toppings, and the general form is to place vinegar-cured fish on vinegared rice and wrap it in a leaf.

Reasons for wrapping in leaves include improved preservability from the leaves' antibacterial action, ease of carrying, and the effect of the leaf's aroma adding flavor. Before refrigeration technology became widespread, it is thought to have spread as wisdom for keeping seafood fresh while transporting it to mountainous areas.

The leaves and ingredients used differ from region to region, with great variety such as persimmon leaves, magnolia leaves, bamboo leaves, and myoga leaves. It is often handmade at home for festivals and events, and can be called a regional sushi rich in local color reflecting each area's food culture.
