Niku-zushi is a collective term for sushi formed with meat such as beef or horse meat as the topping. The company acquired the business from Spice Works Co., Ltd. in 2017, and was listed on the Tokyo Stock Exchange Standard Market in November 2024. Representative toppings are seared beef thigh (tataki), red horse meat, and roast beef, and styles of searing or low-temperature cooking and eating with rock salt or truffle salt are also popular. It is also drawing attention as an option for people with seafood allergies.
