Aka-ebi (red shrimp) is a medium-sized shrimp of the family Solenoceridae caught in the South Atlantic off Argentina, with a body length of about 20 cm. Its whole body is a uniform pale crimson, and its external feature is the absence of markings. The shell is relatively soft and the flesh separates easily.
As a sushi topping, it is often served as nigiri or seared (aburi). The flesh is moderately firm, without the wateriness of ama-ebi (sweet shrimp), and a solid sweetness can be felt. When eaten raw, one can enjoy its springy texture and rich umami.
Because it is rapidly frozen on board the ship after being caught, it is imported to Japan with its freshness preserved. It is widely used at conveyor-belt sushi and takeout sushi, and the reason for its popularity is its authentic flavor despite an affordable price range. Besides sashimi, it is also suited to tempura and salt-boiling—a versatile ingredient. There was once a period when it was sold under the name botan-ebi (spot prawn), but it has now become established as "aka-ebi."
