【English Name】Sakura Denbu
Sakura denbu is a type of denbu (flaked fish seasoned sweet) made by flaking the flesh of white-fleshed fish and seasoning it sweetly, then tinting it a pale cherry-blossom pink with food coloring. It is classified among tsukudani-style preparations. White-fleshed fish such as sea bream (tai) is boiled, the bones and skin removed, and the flesh flaked while drying, then simmered and dry-roasted with sake, mirin, sugar, and salt, and dyed pink with food coloring. It is indispensable as a filling and for color in chirashizushi and rolled sushi, and is also used as a decorative garnish in bento boxes. In Edomae sushi it is called oboro, in some regions chikarani, and in Hokkaido soboro. There are many varieties, including white denbu, yellow denbu, sea bream denbu, and bonito denbu.
