A sushi burrito is a multinational fusion dish in which sushi ingredients are rolled up in a large burrito-style form. It is said to have been devised in 2008 by Peter Yen at the San Francisco restaurant "Sushirrito."The basic composition wraps seafood and vegetables in nori and vinegared rice, with its greatest distinguishing feature being the use of nori, rather than a tortilla, as the outer wrapper. Raw or fried fish is often chosen as the filling, and there are also variations that use soy paper as a substitute for nori. Styles range widely, from those combining Tex-Mex ingredients to those finished purely with sushi fillings. The American magazine GQ described the latter as a "giant maki roll."
It is not positioned as a traditional dish in either Japan or Mexico, but is treated strictly as a fusion dish originating in the United States. After its creation, it spread to sushi restaurants and burrito specialty shops across the U.S., becoming established against the backdrop of takeout demand and American foodie culture. On the other hand, there are also negative voices pointing out that it is hard to eat and that it disregards tradition.
