The crunch roll is a type of creative rolled sushi served mainly at sushi restaurants in North America. Derived from the English word "crunch," it is characterized by producing a distinctive crispy texture by coating the outside of the roll with tenkasu (tempura crumbs) or panko-fried flakes, or by including them as an ingredient.The inner ingredients differ by shop, but a representative combination is said to be shrimp tempura, avocado, and cucumber. It is often finished by drizzling on spicy mayonnaise or eel sauce.
Within Japan the name "crunch roll" is not very common, but at overseas Japanese restaurants it is widely recognized as a standard menu item. It is one of the representative rolls of American sushi and is popular as creative sushi that makes use of the texture of tempura.
