Chakin Sushi — Crepe-Wrapped Sushi

【English Name】Chakin-zushi

Folding a thinly fried egg crepe into a drawstring-pouch shape to wrap vinegared rice -- this is the basic form of chakin-zushi. The name derives from its resemblance in shape to the "chakin," the cloth used to wipe tea bowls in the tea ceremony.

The standard fillings combined inside are shiitake, shrimp, lotus root, and kanpyo, finely chopped and mixed into the vinegared rice. After wrapping it into a round bundle, it is completed by tying a cinch with kanpyo or a mitsuba stem. With an appearance that shines on festive occasions, in bento, and for outings, it has long been prized for special settings.

Going back in time, amid the spread of the vinegared-rice culture of "hayazushi" (quick sushi) from the Edo period onward, it became established as one form of expression standing alongside nigiri, maki, and inari. Its appeal also lies in being easy to make at home, with the fillings and seasoning vividly reflecting the individuality of each region and household.

Note that while the wagashi "chakin-shibori" resembles it in finished shape, it belongs to the different context of confectionery rather than cuisine, so the two must not be confused.
