【English Name】Mahi-mahi

Shiira (mahi-mahi / dolphinfish) is a large surface-dwelling migratory fish of the family Coryphaenidae of the order Carangiformes, widely inhabiting tropical and temperate seas. It reaches a maximum body length of 2 meters and a weight of nearly 40 kg, and mature males develop a raised forehead. In Hawaii it is positioned as a high-grade fish under the name "mahi-mahi," and this name is becoming established in Japan as well. Its season is July to September, but its fat content increases in early autumn. Because its freshness deteriorates quickly and its distribution is limited, it is mainly consumed around production areas such as Kochi and Kyushu. Fresh ones can be eaten raw as sashimi or a sushi ingredient, offering a light, refined flavor. When eating it raw, separating the use of cutting boards is necessary as a measure against Vibrio parahaemolyticus.
