Nodoguro — Blackthroat Seaperch / Rosy Seabass

【English Name】Blackthroat Seaperch

Nodoguro has the official Japanese name akamutsu (blackthroat seaperch) and is a deep-sea white-fleshed fish classified in the family Acropomatidae. The origin of its name (nodoguro means black throat) is the black interior of its mouth, and it reaches a maximum length of 40 cm. It inhabits sandy bottoms at depths of 100 to 600 m and in Japan is distributed along the Pacific side south of the Kanto region, as well as off Niigata and Kyushu. Prized as a high-grade fish in the Hokuriku and San'in regions, it is designated as the official fish of Hamada City, Shimane Prefecture. Its fat content is excellent throughout the year, earning it the nickname "the toro of white-fleshed fish," and it is served grilled, simmered, as nigiri, or seared. Large individuals fetch around 10,000 yen per fish. In February 2026, Kindai University announced the world's first success in fully farmed aquaculture of the species.
