Sanma Roll Sushi — Pacific Saury Roll

Sanma roll sushi is a local rolled sushi known as a specialty of Nemuro City, Hokkaido. It is officially called Nemuro Sanma Roll Sushi, and it was created in June 2008 as a regional food brand.

Its greatest characteristic is the point of using saomae kelp (saomae-konbu) on the outside in place of ordinary nori. The fillings center on fresh Pacific saury (sanma) landed in the waters near Nemuro, along with shiso, green onion, white sesame, and the like rolled in. The aroma of the kelp and the fat of the sanma harmonize, allowing one to enjoy a flavor with depth that differs from ordinary nori rolls.

Nemuro is one of the nation's foremost port towns for sanma catch, and the dish was developed as a regional-revitalization menu item making use of its abundant marine resources. At present it is offered at multiple restaurants within Nemuro City and is also beloved by tourists. It is said to be exceptional when eaten in autumn, when the sanma is at its fattiest.
