【English Name】Tazuna sushi

Tazuna-zushi (tazunazushi) is a type of sushi in which ingredients of different colors are arranged diagonally and alternately, forming stripes like a horse's reins (tazuna). It is also called "tazuna-maki."

The common method is to arrange thinly sliced sashimi, tamagoyaki, cucumber, and other ingredients little by little, overlapping diagonally on top of plastic wrap, and to roll them up with vinegared rice as the core. It is characterized by vividly colored diagonal stripe patterns appearing in the cross-section, and because of its gorgeous appearance it is often used for celebratory occasions and hospitality dishes.

The ingredients used are diverse—red-fleshed fish such as tuna and salmon, white-fleshed fish, shrimp, egg, cucumber, and so on—and consciously combining them with the color contrast in mind is the key to the finish. It is known as a decorative-sushi technique that is relatively easy to attempt even at home.
