【English Name】Iccho

"Itcho" is one of the counting words and calls used at sushi restaurants and eateries. It is used in scenes such as calling out "Hai, itcho!" when an order comes in or when a dish is finished.

Originally it was a word long used as a counter (josushi) for counting specific items such as tofu and kitchen knives. In the world of sushi, it has become established as a spirited call shouted when ordering or serving nigiri. The expression "itcho agari" is also an artisan's phrase indicating that one job has been completed.

At a sushi restaurant counter, there is a custom in which the chef, having taken an order and finished forming the nigiri, calls out something like "itcho omachi!" (one piece, thank you for waiting!), which also serves to create a lively atmosphere in the shop. The same expression is not infrequently used when serving sashimi and other dishes as well.
