Sabi-nuki refers to a style of serving nigiri sushi prepared without wasabi. "Sabi" is the sushi-industry abbreviation for wasabi, and "nuki" means its omission. At sushi restaurants, "namida" (tears) is also known as another name for wasabi.Originally, in Edomae sushi, adding wasabi to the nigiri was considered fundamental. Wasabi is recognized for its appetite-stimulating action and antibacterial effect, and because of its good compatibility with raw fish it became established as a condiment.
In recent years, mainly at conveyor-belt sushi chains, business models that serve all items sabi-nuki have been spreading, out of consideration for children and customers who dislike wasabi and for the sake of work efficiency. At such establishments, the standard method is for customers to add wasabi provided on the table according to their own taste.
Whereas some people once felt reluctant to order sabi-nuki, today it is naturally accepted as an option and can be easily set even at touch-panel restaurants. Since the presence or absence of wasabi shapes the impression of the taste, it can be called an important choice for enjoying sushi in a form suited to one's own preference.
