Rolling up the roll while calculating the color balance of the vinegared rice and nori so that flowers or patterns appear in the cross-section when sliced—kazari-maki-zushi (decorative roll sushi) is a technique that pursues such visual surprise. While highly decorative sushi in general, including nigiri, pressed, and chirashi forms, is collectively called "kazari-zushi" (decorative sushi), the expression focused solely on rolled sushi is this kazari-maki-zushi.

In the world of Edomae sushi, there is a custom of calling items crafted with an artisan's ingenuity "saiku-zushi" (artisan sushi). The tradition of "saiku-maki" lives on in rolled sushi as well, with techniques for projecting family crests, plants and flowers, and geometric patterns onto the cross-section passed down through the generations. The "futomaki matsuri-zushi" (thick-roll festival sushi) handed down in Chiba Prefecture is also a regional dish belonging to the lineage of decorated rolled sushi.

Today the subject matter has expanded greatly, incorporating not only the flowers and fruits of the four seasons but also animals, characters, and corporate logos into the designs. Going beyond purely Japanese motifs, Western presentations and fusion works originating overseas are also increasing, drawing attention as a creative field that elevates sushi into the realm of art.
