【English Name】Tashi / Counter-style sushi restaurant

"Tachi" is a dialectal name used mainly in Hokkaido and the Tohoku region, referring to the testes (milt), i.e., shirako, of cod (tara).

Shirako is the general term for fish testes, but when called "tachi" it often specifically means the testes of Pacific cod (madara) or walleye pollock (suketodara). In Hokkaido it is called "tachi" or "tatsu" and is enjoyed as a winter delicacy.

At sushi restaurants it is sometimes served as gunkan-maki (battleship rolls) or nigiri, and is characterized by a creamy, rich flavor. It is also sometimes dressed with ponzu or served as tempura. Because it is an ingredient that loses freshness easily, there are more opportunities to eat it in areas close to the production region.

Note that the word "tachi" is polysemous and, outside the context of sushi and cooking, may be used with other meanings such as personal names or place names.
