Sanma Narezushi — Fermented Pacific Saury Sushi

【English Name】Samma nare zushi / Saury nare zushi

A narezushi made with saury (sanma), eaten in the southern part of Wakayama Prefecture in the Kumano region. The saury used in this region move from off the Sanriku coast to the Kumano Sea on cold currents, so they are buffeted by the tides for a long time, which firms up the flesh and increases the umami. Saury narezushi can be eaten even when the fermentation is shallow, but those that have aged for several decades into a yogurt-like state are prized as an accompaniment to sake.
