【English Name】Oshi-sushi / Oshi-zushi

A general term for box-shaped sushi widely eaten in the Kansai region. Vinegared rice is packed into a box-shaped wooden frame, ingredients are placed on top, and then the rice and ingredients are pressed together by hand or with a lid to bind them before the frame is removed. The squared sushi is generally cut into pieces to eat. There are "narezushi," which uses the fermentation of the rice, and "hayazushi," which uses vinegared rice.
