Vibrio parahaemolyticus — Food Poisoning Bacteria

【English Name】Vibrio parahaemolyticus

A bacterium that lives mainly in seawater. It inhabits seawater near land, begins to multiply when the seawater temperature rises above 20°C, and attaches to the body surface of seafood. Eating sushi or sashimi to which the multiplied bacteria have attached can cause food poisoning symptoms with repeated diarrhea and vomiting. Since Vibrio parahaemolyticus multiplies rapidly at temperatures of 25 to 37°C, temperature management of food is important. Also, since the cause is often something other than seafood, hygienic management of cooking utensils such as cutting boards and knives is important.
