【English Name】Sinigrin

The pungent component contained in wasabi. Within the cells of wasabi is sinigrin, a glycoside formed by the bonding of glucose and mustard oil. By grating the wasabi, the enzyme myrosinase within the sinigrin acts upon it, generating the pungency.
