【English Name】Ushiojiru / Clear Seafood Soup
A soup made from seafood. While dashi is usually made using ingredients such as katsuobushi (dried bonito flakes) when making soups, ushiojiru is a clear soup that brings out the umami of the seafood ingredients themselves by simmering the materials from cold water to draw out their flavor and make use of their natural taste. Also called ushio-jitate or ushio, it is often made with clams (hamaguri) or sea bream (tai).
