Chiai refers to the muscle called the red fiber muscle located between the back and belly of a fish. Although it has a strong image of being a clump of blood, it is actually a clump of muscle. Chiai exists in both red-fleshed and white-fleshed fish, but is found in greater proportion in red-fleshed fish. It is abundant in tuna, mackerel, bonito, and others. Chiai is rich in iron and vitamins, and also abundant in nutrients such as glycogen and anserine. It is also a high-protein, low-calorie ingredient.
