【English Name】Tsukeru mean prepare sushi

Refers to the act of forming sushi, or the series of actions of taking shari (vinegared rice) from the ohitsu (rice tub) and combining it with a slice of fish to make nigiri sushi. The term derives from "narezushi," the fermented sushi that predated Edomae sushi, in which fish and rice were pickled (tsukeru) together in a barrel. In the past, customers would also order by saying "tsukete" (pickle it) rather than "nigitte" (form it). It is rarely used today.
