【English Name】Japanese Amberjack

Buri (Japanese amberjack / yellowtail) is a large migratory fish of the genus Seriola in the family Carangidae, widely inhabiting the northwestern Pacific. It usually reaches a total length of 1 m and a weight of around 8 kg, with records confirming individuals of 150 cm and 40 kg. Known as a "shusse-uo" (fish that changes name as it grows), in the Kanto region it is called wakashi → inada → warasa → buri, and in the Kansai region tsubasu → hamachi → mejiro → buri, with those generally over 80 cm regarded as buri. Its peak season is winter, and the kanji 鰤 derives from the fact that it gains fat in shiwasu (the twelfth lunar month). Per 100 g it contains about 1.7 g of DHA, about 0.32 g of EPA, and 21.4 g of protein. Farmed production is about 150,000 tons, roughly three times the wild catch, with Kagoshima Prefecture accounting for about one-third of the national total. As a sushi topping, wild winter buri is prized, served as nigiri or seared (aburi).
