【English Name】Oomura sushi

A regional sushi of the Isahaya, Omura, and Hasami areas of Nagasaki Prefecture. It is a two-tiered pressed sushi made with sweet-vinegared rice, layered with fillings such as kanpyo (dried gourd strips), hanpen (fish cake), shiitake mushrooms, burdock, and crumbled white fish (soboro), topped with shredded omelet (kinshi tamago), and made about 20 centimeters square. It is said to have originated when, during the Warring States period, the local people offered it to the soldiers upon a victory of the Omura clan.
